Bargains on fish is one good reason for actually visiting a supermarket instead of ordering online (we order online most weeks - once you've got a standard list of items you habitually buy it couldn't be easier and it means we can have Waitrose produce on the Wirral!).

Last week we visited Sainsbury's at Cheshire Oaks late - say 8pm and they had a ridiculous special on king prawns, so we bought a feast worthy amount and once home with shopping unloaded...

In a wok style pan, heat a small amount of olive oil. Add the prawns, (ours were prepared but still had shells on) and stir fry for 1-2 minutes. Throw in a finely sliced mild chilli and a sliced fat clove of garlic. Stir fry for 30 seconds and douse with a splash of lemon juice and/or wine. Sit a lid over the prawns and cook for a further minute then sprinkle with lots of chopped parsley. Serve onto lettuce leaves/tomato/salad of your choice (note - Haloumi cheese is divine dry fried with prawns and lemon juice) and again go heavy with the fresh lemon juice and freshly ground black pepper.

This truly tastes like summer.
